♥ a balanced diet is a cookie in each hand.


today, in celebration of my sweet father,
i decided to make him a sweet treat: lemon butter crumb cookies
working in the restaurant business, my dad is usually half way out the door
every time i see him, so these bite sized goodies are perfect for
stuffing into his mouth as he makes his way quickly to his car!
(just be careful not to get powdered sugar all over his face.)

here's the recipe, care of my favorite dessert book big fat cookies

ingredients:
1 cup (2 sticks) of unsalted butter at room temp
1 cup of sugar
2 teaspoons of finely grated lemon zest
2 teaspoons of vanilla extract
3 cups of unbleached all purpose flour
powdered sugar for dusting (ps. i have a heavy hand!)

instructions:
preheat oven to 325 degrees F.
in a large bowl, using an electric mixer on low speed, beat the butter,
sugar, lemon zest and vanilla together until smooth for 1 minute.
stop and scrape the sides of the bowl.
add the flour and mix slowly until the dough forms small crumbs.

use a small spoon to scoop up the crumbs and pat them gently into a ball.
bake the cookies one sheet at a time until bottoms and edges are light brown.
(i kept mine in for about 12 minutes)
cool the cookies for 10 minutes before transferring.
dust lightly (or heavily!) with powdered sugar.
